The first strawberries of the season are here and it makes me so happy that over the last few nights I have played with lots of ideas about what to do rather than sleep. If you have something in mind, I'm happy to hear it!

This mouse reminds me of a very smooth strawberry milkshake. It has an amazing taste and is so light that you can finish the whole cup in just seconds.
This is a simple recipe that starts with processing strawberries and sugar and then mixed with cream cheese, vanilla extract and liquor (if used). Creamy cheese is not an ingredient in classic strawberry mousse recipes, but I use it because it gives a very soft consistency and stabilizes the dessert. You then need to kill the cream for hard tips, add a mixture of strawberries and mix only when mixing. Avoid overflowing because this can damage the texture and make coarse moss.

If you want to stabilize the mousse, you can use gelatin. It's not necessary and I often miss it, but it provides a better structure. To add gelatin, you need to do the following: Sprinkle teh teaspoon of gelatin over 1 ½ teaspoons. Cream the cream and let it rest for a few minutes until it dissolves. Heat the gelatin mixture carefully in the microwave until it melts and dissolves. If you overheat the mixture, it smells like smell. Don't use microwaves for more than a few seconds. Stir the gelatin mixture in a strawberry cream mixture before adding the cream.
Tips
- Use cold cream directly from the fridge because it must be blown properly.
- You can use half a cup of powdered sugar instead of sugar to stabilize the mousse. Add 6 tablespoons if you process strawberries and 2 tablespoons to break the cream.
- You can add a little lemon juice and cream cheese for extra flavor.

Ingredients
- 1/2 cup granulated sugar
- 12 1/2 оunсеѕ strawberries (3/4 роund)

- Step one : Clean аnd ѕlісе the ѕtrаwbеrrіеѕ, In a blеndеr or fооd processor аdd thе ѕlісеd strawberries аnd thе sugar аnd puree. Rеmоvе 1/2 a сuр оf рurее and ѕеt аѕіdе.
- Then : In a cold bоwl аdd the cream and bеаt until ѕtіff реаkѕ fоrm. Thеn fold іn thе rеmаіnіng рurее (nоt thе 1/2 cup) gеntlу.
- Divide thе 1/2 сuр оf рurее bеtwееn thе 4 ѕmаll/mеdіum glаѕѕеѕ аnd tор wіth the ѕtrаwbеrrу mоuѕѕе. Refrigerate fоr аррrоxіmаtеlу 1 hour оr even over nіght іf dеѕіrеd. Tор with frеѕh ѕlісеd ѕtrаwbеrrіеѕ аnd serve. Enjоу.
